For us low-carb folks, substituting cauliflower for the spuds works pretty well too.
Of course a little Parmesan never hurts either.
That gives me a good idea for dinner tonight. Except I might have to substitute the rosemary!
I like cauliflower. But not as much as I like potatoes. :-)
